Chang's Glutinous Rice Flour becomes very sticky when heated and has a uniquely chewy texture. Glutinous rice is a common ingredient in dumplings and many Asian desserts. Glutinous rice flour is milled from short-grained sticky rice. It is known as "Mochiko" in Japan and is used to make Mochi balls. The use of "glutinous" in its name refers to the gluey consistency the flour gives to food, however, the glutinous rice flour doesn’t contain any gluten.
