Chang is Thai for Elephant and the name and logo are instantly recognisable on bags of grain - a sign of quality. Chang's Glutinous Rice Flour becomes very sticky when heated and has a uniquely chewy texture. Glutinious rice is a common ingredient in dumplings and many Asian desserts. Glutinous rice flour is milled from short-grained sticky rice. It is known as "Mochiko" in Japan and is used to make Mochi balls. The use of "glutinous" in its name refers to the gluey consistency the flour gives to food, however the glutinous rice flour doesn’t actually contain any gluten.
