Homemade Thai Beef Rice Noodles
You’ll find beef and noodle recipes across many different cuisines, all offering various takes on this match made in heaven. This Thai-inspired recipe uses succulent rice noodles along with beef stew and steak slices to create a hearty, satisfying dish you can replicate again and again. Thai Beef Noodles Ingredients
- 1/2 pack Thai rice noodles, soaked in cold water and drained
- 1 pack of beef stew
- 1 piece rump steak, thinly sliced
- 6-8 meatballs (optional)
- Pak choi
- Vegetable oil for pan
Herbs (A)
- 4 coriander roots or stalks, crushed
- 4 cloves garlic, crushed
- 1 tbsp black pepper
Herbs (B)
- 1 bay leaf
- 1 cinnamon stick
- 1 star anise
Sauce
- 2 tbsp instant beef flavour paste
- 1 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp rock sugar or brown sugar
- 2 tbsp palm sugar
How to Make Thai Beef Noodles
- Add the vegetable oil to a big saucepan, along with the herbs (A) and mix well. Stir in the other herbs (B). Add the beef stew with all the sauce ingredients and mix well.
- Add stock or water and let it simmer for about 45 minutes to 1 hour. Scoop out the white foam that floats on top of the soup to make it clear. Add the meatballs if using them.
- Bring a separate saucepan of water to the boil. Cook your rice noodles, beansprouts and pak choi and place in a noodle bowl. Add beef stew and meatballs and place some raw, thinly sliced beef on top.
- Add the boiling hot soup on top of the beef to cook it. Garnish with crispy garlic, chilli flakes and spring onion. Enjoy!
