What Does Pad Thai Taste Like?
Most pad thai recipes (including ours) includes peanuts, chilli and lime to give a fragrant kick to the dish. The sauce also adds layers of sweetness and saltiness, combining wonderfully with the succulent chicken or tofu for a deliciously complex yet comforting dish.
Which Noodles Should You Use For Pad Thai?
Traditionally, pad Thai is made with flat rice noodles, also known as ‘rice sticks’. You can experiment with different kinds of noodles, but these rice noodles will give you the most authentic experience.
Pad Thai Ingredients
For the sauce:
- 3 tbsp soft brown sugar
- 2 tbsp tamarind paste
- 2 tbsp fish sauce
- 2 tbsp oyster sauce
For the stir-fry:
- 125g rice sticks 5mm (rice noodles)
- 1/2 onion, sliced
- 4 cloves of garlic, chopped
- 150g chicken, thinly sliced
- 2 eggs, beaten
- 100g beansprouts
- 100g firm tofu, cut into small chunks
- 50g peanuts, chopped
- 4 spring onions, sliced
- 2 red chillies, sliced
- Fresh limes to serve
How to Make Pad Thai
- Soak rice noodles in boiling water for 5 minutes.
- Make the sauce by combining the sugar, tamarind paste, fish sauce and oyster sauce. Mix well and set aside.
- In a large frying pan, fry the onion and garlic for a minute before adding the chicken.
- Once cooked, push to the side of the pan and add the beaten eggs. Stir as the eggs scramble.
- Add the tofu and beansprouts.
- Drain your noodles before tossing them into the pan. Cook for a minute before mixing in the sauce.
- Finally, add the spring onions and peanuts before serving up.
- Garnish with chilli and fresh lime.
