Simple Kimchi Jjigae – Korean Stew Recipe

What is Kimchi Jjigae?
Kimchi jjigae is a classic Korean stew or soup where the main ingredient and flavour is kimchi. This results in a spicy, hearty dish that can be paired with any number of side dishes or rice.
Typically, the stew will combine kimchi, stock/sauce/paste, spring onions, tofu and pork, but you can easily make additions depending on what you feel like or what you’ve got left over in the fridge. This version keeps it simple with tofu, but if you want an even more wholesome meal, pork belly works wonderfully.
Kimchi Jjigae Ingredients
- Korean kimchi soup spice paste
- Kimchi
- Tofu
- Spring onions
How to Make Kimchi Jjigae
- Add your stew base packet to a saucepan of water and simmer.
- Add in a few spoonfuls of kimchi and leave to simmer.
- Put in your tofu and leave to cook for a few minutes.
- Top with sliced spring onions and serve with rice.
