Sweet Potato Glass Noodles
Made from sweet potato starch, these noodles have a chewy, light, almost springy texture and slightly sweet taste. You will likely also see them referred to as just glass noodles or vermicelli noodles – although, these names are more of an umbrella term as they can also refer to noodles made of mung beans or rice flour.
Korean sweet potato noodles are commonly used in a tasty stir-fry dish called japchae. They are often thought of as a healthier noodle choice due to being nutrient-dense and lower in calories than other noodles types.
