What is Baijiu?
Baijiu, also sometimes known as shaojiu, refers to an alcoholic beverage made from fermented sorghum or other grains. The clear Chinese alcohol has a long history, with early forms of what we now recognise as baijiu appearing around the 1300s.
Baijiu is very different from any other spirit – it has a complex flavour that can be quite hard to pin down. Depending on the type you try, baijiu can be floral and sweet, spicy and fruity or have a strong, almost soy-sauce-like taste.
The drink is part of many elements of Chinese culture. It makes an appearance at celebrations, holidays, business meetings and other occasions. Typically, it is drunk as a shot or sipped on, although it can be incorporated into cocktails.
Baijiu Alcohol Content
Chinese baijiu is powerful stuff, with the ABV being around 35-60%. The average vodka ABV starts at around 40%.
