Thai Summer Desserts

Now that we’re in the depths of summer, it’s the perfect chance to explore some tasty summer treats . After a hard year of uncertainty, we all deserve a little something nice!There is a vast world out there beyond your typical ice-cream sundae. We’re here to liven up your summer dessert plans with these delicious Thai recipes that are perfect for satisfying your sweet summer cravings!

Mango Pudding

This is a popular option and is perfect for lovers of the tangy tropical fruit . Mango Pudding is hassle-free and easy to make – perfect for those lazy summer afternoons! Some recipes will use whipping cream, but for a healthier and richer option , we’ve opted to use coconut milk.

Ingredients and Method

You will need: • 2 ripe mangos • 3tsp gelatine • 1/3 cup caster sugar • 1/2 cup hot water • 1 cup coconut milk (or whipping cream if you prefer) 1. To prepare this yummy dish, scoop out the mango flesh and blitz in a blender until you get a smooth puree. 2. Boil the water in a saucepan and remove from heat when done. Put the gelatine in the water, making sure to whisk continuously until it has dissolved, and no lumps are left. 3. Add the sugar to the gelatine mixture and stir until fully dissolved. 4. Combine this mixture with the mango puree and coconut milk. Blitz together until everything is fully combined. 5. Pour the final mixture into four ramekins or small dessert bowls, making sure you distribute it evenly. 6. Refrigerate for at least 2 hours. 7. Serve cold and enjoy!

Thai-Style Crème Caramel

This dessert is a tasty Thai twist on the classic pudding . Like many Thai desserts, it is healthier than other Western versions. This recipe has the added bonus of taking only 10 minutes to put together. It’s perfect for when you need a quick sugary fix!

Ingredients and Method

You will need: • 2 eggs • 1 tbsp sugar • 1 cup coconut milk • 1 tsp coconut oil • 1/4 cup maple syrup or Thai Palm sugar • Pinch of salt • 1/4 tsp pandan essence (this paste turns the dessert a vibrant green colour and provides a subtle flavour. If you don’t fancy this, a few drops of vanilla essence is also a great addition) 1. Preheat oven to 180°C 2. Lightly grease four ramekins 3. Beat the eggs and add the sugar, coconut milk, pandan paste and salt. Stir everything until combined 4. Pour enough syrup into each ramekin until it covers the base. 5. Pour your egg mixture into each ramekin until they are 3/4 full. 6. Carefully put the ramekins into a deep-sided roasting pan. Pour some water into the pan until it reached 1/4 of the way up the side of the ramekin. 7. Bake for 30 minutes. 8. When cool, run a knife around the interior of each ramekin and upturn the puddings onto dessert plates to serve.

Banana-Lychee Dessert

This one’s a breeze! Banana-Lychee Dessert is another treat for the taste buds that uses coconut milk to give you those sunny summer vibes! The fruity pudding is light and fresh; its exotic flavours will leave you wanting more . Luckily this recipe, known as dessert soup, is also simple and speedy!

Ingredients and Method

You will need: • 1 large ripe banana • 10 fresh peeled lychees or canned and drained • 1 can coconut milk • 1/4 cup brown sugar • Pinch of salt 1. Peel the lychees (if using fresh ones) and the bananas. Slice the bananas lengthways and then into rough 2-inch-long bites. 2. Heat the coconut milk in a saucepan over a medium-high heat 3. Stir in the sugar until dissolved. Add sugar to your desired taste. 4. Add the fruit and pinch of salt, stirring continuously until warmed through. 5. Serve warm or cold!
