Vietnamese Prawn Summer Rolls Recipe

What are Vietnamese Summer Rolls?
Summer rolls are a delicacy of Vietnamese origin - you may also see them referred to as Vietnamese spring rolls, salad rolls or fresh spring rolls. A traditional filling of rice noodles, carrot, lettuce, cucumber, herbs and shrimp are wrapped in a thin, translucent sheet of rice paper to create a stunning, delicious roll. The rolls are then eaten with a range of dipping sauces, usually including peanut, sesame or hoisin. Luckily, creating these tasty treats at home is relatively simple - it is just a case of assembling your chosen filling ingredients and rolling them up! Ingredients for Prawn Summer Rolls
- 12 rounds of rice paper
- 100g vermicelli noodles
- 18 cooked prawns, cut in half
- Veg selection (e.g. 1 carrot and handful of lettuce leaves)
- Handful of mint leaves, chopped
- Sauce selection (e.g. peanut sesame sauce, laoganma and soy sauce)
How to Make Vietnamese Summer Rolls
1. Bring a pot of water to the boil and cook the noodles as per the packet’s instructions. Drain and set aside.2. Prepare the fillings - slicing the prawns and vegetables.3. Prepare a bowl of warm water. Dip a sheet of rice paper into the water for about 10 seconds until it softens. Drain on a tea towel.4. To make a roll, place the sheet on a board - add 3 prawn halves and a portion of the veg, mint and noodles to one side of the rice paper. 5. Fold the paper over the ingredients and roll to the middle. Once it has been rolled halfway, fold the two ends of the paper into the filling until it is completely enclosed. Continue rolling the rest of the rice paper. 6. Cut each roll diagonally and serve with the dipping sauces. We’d love to know if you give these summer rolls a try!
