Spicy Sichuan Noodles Recipe

Luckily, @bakeristas gave us a bit of insight into her delicious recipe for spicy Sichuan noodles, also known as dan dan noodles, so you’re well on your way to making this classic dish yourself. What are Dan Dan Noodles?

These noodles are an iconic street food dish originating from the Sichuan province in China. This mouthwatering dish is bursting with flavour and, typically, lots of spice – although you can tone down the chilli content if you prefer a slightly more subtle taste.

What Do Dan Dan Noodles Taste Like?

As already mentioned, one of the key characteristics of dan dan noodles is their spiciness. Aside from this heat, the dish is full of complex flavours with gloriously umami notes.Usually served with pork, the recipe also contains a succulent richness. Spicy Sichuan Noodles Pork Marinade Ingredients

  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp sugar
  • 1 tsp cornstarch
  • 1 tbsp Chinese cooking wine

Spicy Sichuan Noodles Ingredients

  • 150g minced pork
  • 2 spring onion (chopped)
  • 1 tbsp garlic (chopped)
  • 1 tbsp ginger (chopped)
  • 10g peanuts (chopped)
  • 2 bird eye chillies (chopped)
  • Egg noodles
  • 2 cups chicken stock

Spicy Sichuan Noodles Sauce Ingredients

  • 5 tbsp Chinese sesame paste
  • 5 tbsp hot water
  • 1.5 tsp sugar
  • 3 tbsp light soy sauce
  • 2 tbsp black vinegar
  • 4 tbsp chilli oil (depending on how spicy you like it)
  • 1 tbsp hot chilli bean paste

How to Make Spicy Sichuan Noodles at Home

  1. Marinade the pork for an hour.
  2. Stir fry the garlic, ginger and pork until fully cooked.
  3. In another pan, cook the noodles in chicken stock. Meanwhile, prepare the sauce by combining the ingredients in another bowl.
  4. Once the noodles are cooked, rinse with cold water.
  5. Fill a bowl with the stock and noodles and top with the sauce, pork, spring onion, peanuts and chillies. Serve hot and enjoy!
