Recipe – Cold Green Tea Soba Noodles

Soba is a type of Japanese thin noodles, which is made from buckwheat flour. It is usually served with a cold dipping sauce. In summer, soba is one of the most consumed foods in Japan as Japanese always cool themselves down with delicious cold soba noodles. It is quick and easy to refresh yourself in a boiling hot summer day.

Cold Green Tea Soba Noodles

Ingredients (serves 2)

200g Hakubaku Organic Cha Soba Noodles

50ml Mizkan Oigatsuo Concentrated Tsuyu Bonito Soup

Shredded Nori Seaweed

Wasabi Paste

Thinly Chopped Spring Onion

Step1:

Boil the soba noodles for approximately 6 minutes. Then, strain them immediately to prevent further cooking. Next, wash them under very cold water for two times, then allow to dry on a plate for about 5 minutes.

Step2:

To prepare the dipping sauce, mix 50ml of the bonito soup concentrate and 150ml in a small bowl. Add the spring onion and a 1/8 teaspoon of wasabi into the sauce.

Step3:

Sprinkle shredded nori seaweed on top of the noodles and it is ready to serve.

Tip:

Get a mouthful of noodles with chopsticks and dip them in the sauce.

You can add ice cubes into the sauce to make it cooler.
