Rainbow Vegan Sushi Recipe

Sushi is a Japanese staple, with many styles and variations to enjoy. Typically, it’s made of seasoned sushi rice, seaweed, various vegetables and fish, which is often raw. This version shared by @hemaeats on Instagram is for all the vegans out there who want to experience a taste of Japanese cuisine – or anyone who fancies a sushi dish that’s a little less fishy.

Using Bamboo Sushi Rolling Mats

Before you begin, you’ll need the right equipment. Number one on your list should be a sushi rolling mat. Without this, you’ll have a tough time getting those satisfying sushi rolls. Bamboo sushi mats can be picked up at your local Japanese supermarket or right here at Oriental Mart!

How to Make Vegan Sushi at Home

Start by cooking the sushi rice per the pack’s instructions. Add rice seasoning, mix and leave to cool.

For Maki Sushi

Place a layer of cling film on the sushi mat and place a seaweed sheet on top. Spread an even layer of rice on top and add the veggies/tofu 1/4 up from the bottom of the mat. Using the mat, roll everything up tightly. Wet the top of the seaweed sheet with water to stick the ends together. Remove the cling film and cut your sushi into pieces.

For Uramaki Sushi

Place a layer of cling film onto your sushi mat and sprinkle sesame seeds on top. Spread an even layer of rice on top of sesame seeds. Add a seaweed sheet on top, then add veggies/tofu 1/4 up from the bottom of the mat. Using the mat, roll everything up tightly. Wet the top of the seaweed sheet with water to stick the ends together. Remove the cling film and cut your sushi into pieces.

For No Rice Sushi

This is ideal for when you run out of rice and still have seaweed sheets and filling left! Use the same method as maki sushi above, just without the rice.
