What is Laksa?

Firstly, what exactly is this dish that sounds and looks so delicious? Laksa can come in many forms, but at its heart is a kind of spicy noodle soup. Although its origins lie in Malaysia, you’ll find a similar dish in many countries across South East Asia. The exact ingredients used in the soup will depend on each individual, but you’ll usually find things like shrimp, chicken or tofu making an appearance alongside noodles and an indulgent coconut milk broth.

What is Laksa Paste Made From?

Laksa paste is an essential ingredient in the dish as it provides that iconic punch of flavour. The paste itself is usually a blend of shallots, garlic, turmeric, shrimp paste, lemongrass, galangal and dried red chillies. Here’s how you can make this classic Malaysian delicacy at home!

Laksa Ingredients

  • Small chunk of galangal (grated)
  • 2 garlic cloves (crushed)
  • 200g curry laksa paste
  • 400-500ml chicken stock
  • 200-250ml coconut milk
  • 1 lemongrass stalk (lightly bashed)
  • 1 tbsp fish sauce
  • 0.5 tbsp sugar
  • 1 tbsp lime juice
  • 20 mini fried fish balls
  • 12 mini deep-fried tofu puffs
  • Handful of bean sprouts
  • Egg noodles
  • 2 small shallots
  • 2 boiled eggs
  • 2 spring onions
  • Sambal oelek (to taste)

How to Make Laksa

  1. Sauté the galangal and garlic in oil for a minute, then add the laksa paste, cooking until fragrant.
  2. Add some stock and stir on a low heat. Add the rest of the stock bit by bit throughout cooking. Add the coconut milk, lemongrass, fish sauce, sugar, and lime. Simmer for 10 minutes.
  3. Add the fish balls and tofu puffs. Simmer for a further 5 minutes before adding the bean sprouts.
  4. Prepare the noodles according to the packet’s instructions. While they’re cooking, fry the shallots in oil until crispy and boil the eggs.
  5. Serve the broth with your noodles and top with the eggs, onions and sambal.
