Tamagoyaki Recipe: Japanese Rolled Omelette

Also known as a Japanese omelette, tamagoyaki is a rolled egg dish flavoured with soy sauce, mirin and dashi stock, all coming together to create the perfect balance of sweet and salty flavours. Its versatility makes it a dish that is both popular at breakfast as well as part of a bento box or as an appetiser.

Mirin is a sweet cooking wine and dashi is a staple stock used in many Japanese dishes for its umami flavor. Sugar and soy sauce are also added to a traditional tamagoyaki, giving it a rich taste full of depth. 

Tamagoyaki is typically cooked in a rectangular frying pan to achieve its recognisable shape, however, a round frying pan will achieve the same results taste-wise! 

You can serve it with shredded daikon and soy sauce or get creative with different fillings. You can find everything you need for all your tamagoyaki creations at our Japanese grocery store

You Will Need 

  • 4 eggs
  • 4tbsp dashi stock
  • 1tbsp white sugar
  • 1tsp mirin (Japanese cooking wine)
  • 1/2tsp soy sauce
  • 1/2tbsp vegetable oil (or other cooking oil)

Method 


1. Set the vegetable oil aside and whisk together the remaining ingredients in a bowl.

2. In a large pan, heat 1/3 of the oil on a medium heat. Add 1/3 of the egg mixture ensuring the bottom of the pan is evenly covered. 

3. Once set, roll the egg from one side of the pan. Keep to one side of the pan and add another 1/3 of the oil and mixture. Repeat the rolling process. 

4. Repeat the process for the final 1/3 of the mixture. 
Remove and allow to cool slightly before slicing. You can use a bamboo rolling mat if required.
