Glutinous Rice with Chinese Sausage Recipe

There is nothing better than a super simple recipe that packs in delicious flavours and textures, and this wonderful recipe for glutinous rice with Chinese sausage fits the bill on both counts!

What is Glutinous Rice?

This recipe incorporates a hearty portion of glutinous rice, but what exactly is this? Also known as sticky or sweet rice, glutinous rice has a recognisable sticky texture, offering a more succulent experience than other kinds of white rice. You’ll find this rice cropping up in both sweet and savoury Chinese dishes as well as being incorporated into numerous recipes from countries across east Asia.

Glutinous rice is usually soaked in water and then cooked in a steamer to ensure you achieve that classic sticky texture. However, it can also be boiled in water as you might normally cook rice or prepared in a rice cooker for a more convenient option.

This recipe yields two portions.

Ingredients

  • 250g glutinous rice
  • 2 shiitake mushrooms (soak overnight)
  • 10g dried shrimp (soak 30mins)
  • 1 cured Chinese sausage
  • 1 cured pork and duck liver sausage

Seasoning:

  • 1.5tbsp soy sauce
  • 1sp dark soy sauce
  • 1tsp oyster sauce
  • 0.5tsp sesame oil

How to Make Glutinous Rice with Chinese Sausage

  1. Dice the mushrooms, shrimp and sausages. Stir fry and set aside.
  2. Cook the glutinous rice in a rice cooker. To make the rice more flavourful, you can use chicken stock rather than water or the water the shiitake mushrooms were soaked in.
  3. Add the seasoning and chopped ingredients to the rice. Stir well.
  4. Top with some chopped spring onion and shredded egg if desired!
