Tips for Getting the Perfect Fluffy Cloud Pancakes
There are a few things you can do to ensure your pancake batter creates the fluffiest batch!
Don’t Over-Mix the Batter
You don’t want to deflate your airy meringue when adding in the yolk mixture, so make sure to fold them together carefully.
Don’t Flip the Pancake Too Soon
Flipping the pancakes too soon can result in the pancake collapsing and uncooked batter oozing out.You want to wait until bubbles have started to form on the top and the centre barely jiggles. Once you have reached this stage, very carefully flip it over with a spatula.
Use Plenty of Cooking Spray
If you are using moulds to get the perfect shape, it is important to coat them with a generous amount of cooking spray to avoid your pancakes sticking.
Don’t Overfill the Moulds
When pouring the batter into the moulds, fill them to around halfway; this will allow room for them to rise almost to the top of the mould.
Cover the Skillet
When you cook the pancakes, you will be doing it low and slow so that they have enough time to rise. Covering the pan can trap the heat and moisture inside, essentially steaming the pancakes with the added drops of water; this will give you a light, fluffy texture for the perfect jiggly pancakes!
