Chinese Steamed Dumplings Recipe - Siu Mai With Pork and Shrimp

There are countless variations to try when it comes to Chinese steamed dumplings, and siu mai (or shumai) is one of the most popular. Many of us enjoy traditional dumplings from the Chinese takeaway without realising how easy they are to make at home. What is Siu Mai

Originating from Hohhot in northern China, siu mai is now enjoyed in many regions and countries, with the Cantonese version being one of the most popular and sought after. The Cantonese take on siu mai is usually enjoyed as dim sum and consists of a filling of ground pork, chopped shrimp, mushrooms and spring onion. Siu mai are served open-faced, meaning you do not have to worry about sealing them like you would other dumplings. This makes them a great option if you are new to making dumplings.

Ingredients for Siu Mai Chinese Dumplings

  • 20 circular siu mai dumpling, gyoza or wonton wrappers
  • 180g ground pork
  • 180g shrimp, peeled, deveined
  • 3 dried shiitake mushrooms, rehydrated and chopped
  • 2 spring onions, chopped
  • 1tbsp Shaoxing wine
  • 1tbsp soy sauce
  • 1tsp sesame oil

How to Make Siu Mai Chinese Dumplings

  1. Mince the shrimp, spring onions and mushrooms in a bowl before combining with the pork.
  2. Stir in the cooking wine, soy sauce and sesame oil until everything is completely combined.
  3. Construct the dumplings by laying one of the wrappers flat and wetting the edge with water. Spoon 2 teaspoons of fillings into the centre of the dough, taking care not to overfill it.
  4. Gather up the edges of the wrapper, squeezing them to the centre and gently pleating them. The top of the filling should still be exposed.
  5. Line your steamer (ideally a bamboo steamer) with parchment or steamer liners before adding your dumplings into it.
  6. Steam over 2 inches of boiling water for 5 to 10 minutes or until the filling is cooked through.
