What is Chicken Lo Mein?
Lo mein is a traditional Chinese dish made with egg noodles and an array of vegetables and meat or tofu. Cantonese lo mein is also sometimes served with wontons and is considered a dry variation of noodle soup.
What is the Difference Between Lo Mein & Chow Mein?
While lo mein and chow mein are very similar dishes, there are some vital differences. The main difference lies in the cooking method. With chow mein, noodles are fried, so they are crispy. The sauce is also used sparingly. When making lo mein, you will boil and drain the noodles before tossing them with the rest of the ingredients and covering them liberally in the sauce.
Chicken Lo Mein Ingredients
- Cooking oil
- 2 chicken breasts, cut into strips
- 1 garlic clove, minced
- 3cm fresh ginger, minced
- ½ onion, sliced
- 2 carrots, cut into matchsticks
- 100g mangetout
- 300g egg noodles
- 2 spring onions, chopped
Chicken Lo Mein Sauce Ingredients
- 2tbsp dark soy sauce
- 3tbsp hoisin sauce
- 1tbsp Shaoxing wine
- 1tsp sesame oil
How to Make Chicken Lo Mein
- Combine the sauce ingredients in a small bowl and set aside.
- Heat your cooking oil in a wok over a medium-high heat before adding the chicken. Cook for a couple of minutes until golden. Set the cooked chicken aside.
- Boil the noodles according to the packet’s instructions, drain and set aside.
- Add the garlic and ginger to your wok and fry until fragrant.
- Add the onion, carrots and mangetout. Cook for around 3 minutes or until the vegetables are tender.
- Add the chicken, noodles and sauce to the vegetables. Stir to combine. Cook for a couple of minutes until everything is heated through.
- Garnish with the spring onions and serve.
