Beef and Tomato Noodle Soup Recipe
Soup is a classic comfort food and makes a great pick-me-up whether you want a quick lunch or warming dinner. We recently teamed up with @thechinesefoodie to bring you a hearty recipe that’ll keep you going throughout the colder months or satisfy your taste buds at any time of the year. Beef and tomato noodle soup is packed with delicious flavours, with the ingredients absorbing each other's flavours wonderfully. Where Does Beef and Tomato Noodle Soup Come From?
Soup dishes with beef and noodles exist in some form or another across southeast Asia, but this particular tomato variation has roots in China and Taiwan. Often cooked in just one pot, it is a super easy recipe to prepare and can be customised to include various other vegetables. So, how do you make traditional beef and tomato noodle soup?
Beef and Tomato Noodle Soup Ingredients
- 700g Kinda Foods Frozen Beef Tendon & Flank
- 200g Fresh Asia Flat Noodles
- 1kg tomatoes, de-skinned and roughly chopped
- ½ large onion, diced
- A few carrots (optional)
- A few slices of ginger
- 3 star anise
- 3 bay leaves
- 1 cinnamon stick
- 10 dried chillies, pre-soaked in hot water (optional)
- 2 tbsp cooking wine
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce
- Sugar (to taste)
- Salt (to taste)
- Spring onion for garnish, finely chopped
How to Make Beef and Tomato Noodle Soup
- Put the beef into a large pot and add cold water, 1 tbsp cooking wine and 1 slice of ginger. Bring to boil before removing any impurities; drain and set aside.
- Heat a dash of vegetable oil In a casserole dish, then add in the beef and fry on medium heat until it is evenly coloured and starting to brown. Add the diced onion, all the spices and a little sugar; keep frying for a few minutes until the onion turns transparent.
- Now add in 800g or so of the tomatoes, along with the carrots, cooking wine, soy sauce and oyster sauce. Put a lid on the dish and cook for 2 hours over medium/low heat.
- Add the rest of your tomato chunks 20 minutes before serving so they can keep their shape. Adjust seasoning to your taste with salt and sugar.
- Boil the noodles in hot water to al dente, drain and serve with the beef and tomato soup. Garnish with spring onion and slurp away!
